There’s a lot more to Del Posto’s renowned executive pastry chef, Brooks Headley, than an ethereal Butterscotch Semifreddo and impossibly moist Torta Carotina (carrot cake). For instance, did you know that he’s actually an accomplished hardcore and indie rock drummer, pounding the skins for Universal Order of Armageddon, Skull Kontrol and Wrangler Brutes, and co-founding Young Pioneers with Tonie Joy, and Oldest, with guitarist Mick Barr of Orthrelm? (We didn’t know either!)
But back to Headley’s culinary exploits.
In addition to ingeniously interweaving savory items into his desserts, exemplified by a Pecorino Romano Cake with olive oil gelato and Melanzane e Chocolato—baby Japanese eggplant layered with sheep’s milk ricotta and finished with warm chocolate sauce—his repertoire extends far beyond sweets. For instance, the cookbook author and James Beard award-winner recently made waves with—of all things—a kick ass veggie burger, featuring his fast food-style patties at instantly sold-out pop-ups, as well as a private dinner party at Questlove’s apartment.
That’s why we’re especially excited that Headley’s stepping out of his pastry box once again during Taste Talks, conducting a cooking demo of his admittedly unorthodox but eminently craveable masterworks.
