Following the Selkirk Grace—we hae meat, but not literally!—the meal begins with a soup course; the best and easiest way to go is potato soup. I like this recipe for a baked potato soup, though I’m the sort of person who lets leftover broth sit in the refrigerator go bad, so I add two more potatoes and finish off the carton. Though they’re not particularly Scottish, tempeh bacon and oyster crackers enhance any potato soup, as does a chopped-chive flourish. Fake cheese, of course, is gross, so skip it.
