Ethan nor his roommate own measuring cups so they improvised, measuring rice and water in an inherited high ball glass. The glass held around 8 oz. Carlos dumped three of the cups’ worth of rice and five of water. He said to cook it on medium heat until most of the liquid is gone and the rice has fluff.
Carlos started the beans the same as he did the squid, with onions and garlic over medium heat in an oiled pan. Next, he dumped the beans, tamping with a wooden spoon. “So you want to smoosh the beans?” I asked. “Just a little bit,” he said. “You want to have a gradient between the liquid and the solid. So it’s not just beans… swimming in this juice.”
