Nordic Jewish: Pike with Egg Yolk at Aska
On the surface, the modern-Scandinavian boom ushered in by places like Aska has little to do with your bubby’s schmaltz-laden, monochromatic comfort foods. But one common denominator is an unlikely love of pike, the humble whitefish frequently associated with jellied lozenges of gefilte. And at Aska, it appears dolled up in a number of ways; poached in smoked milk, fried into fishy potato chips, topped with fermented carrots and hay, or (the most Jewishy of all), pickled and strewn with egg yolk, onion and dill.
