Painting the outside of the pig with herbs, olive oil and salt is a fine idea. So is using a spray bottle filled with soy sauce and sugar (something I’ve done with gloriously crispy results). But while applying bastes and marinades is fun, and gives you something to do throughout those long hours, it’s not entirely necessary; the whole neighborhood will smell like a roasting pig in any case. And the skin will get crisp and flavorful on its own, too.
