Care for some coffee with your coffee? DUMBO’s own Brooklyn Roasting Company is the first shop in the U.S. to serve sweets showcasing CoffeeFlour®, crafted by Sunset Park’s gluten-free baking mavens, Izzy & Em.
Made by converting coffee fruit pulp (a largely wasted by-product of green coffee production) into a nutrient-rich cooking medium (with more fiber per gram than wheat flour, more protein than kale, more iron than spinach and more potassium than bananas) CoffeeFlour® is poised to reinvent the coffee industry on a massive scale—creating a new revenue source for some of the poorest areas of the world, removing billions of pounds of botanical waste from streams and soil, and adding an innovative new ingredient to the global menu.
“The truth is that there’s much more to coffee than the bean,” said CoffeeFlour® founders Dan Belliveau and Andrew Fedak in a statement. “We’re thrilled to be working with Izzy & Em’s and the talented team at Brooklyn Roasting Company to imagine a profoundly more sustainable industry. We view this partnership as our first big step in educating the public about CoffeeFlour® and the ways in which the product will revolutionize the coffee world.”
Because while they’ve mounted previous sampling campaigns at high-profile events such as the TED2015 Conference, Dan Barber’s wastEd at Blue Hill, and the Culinary Institute of America’s Menus of Change, Brooklyn Roasting Company is the one and only establishment where you’ll actually find CoffeeFlour®-based products sold retail, outside of Casa Del Café in Nicaragua (one of the countries where they’re currently converting waste, along with Mexico, Hawaii, Guatemala and Vietnam).
“I’ve been looking for successful culinary applications of coffee pulp for years… tasted teas and other attempts to use coffee waste, and none have quite worked until now,” said Brooklyn Roasting Company co-founder, Michael Pollack. “The CoffeeFlour® pastries baked by Izzy & Em’s are delicious, gluten-free, and the perfect addition to our menu. And the potential impact that CoffeeFlour® will have on the coffee industry really excites us.”
So what, exactly, are these game-changing baked goods, calculated to challenge how we think about our morning cup of coffee? Current offerings include dense, palm-sized drop cookies, thick with oats and toffee, fudgy double-chocolate brownies, studded with chocolate chips, and cinnamon crumble-dusted lozenges of coffee cake, each boasting distinctively floral, citrusy, and roasted fruit-type notes from the CoffeeFlour®. Gotta love the concept of saving the world through conspicuous consumption of sweets.
