Essentially shredded, fried potatoes, latkes boast doppelgangers all around the world, like Swiss röstis, American hash browns, or elegant French gaufrettes. Although chef Kat Ploszaj just sticks with the Eastern European term (she is Polish, after all) for her crispy trio of potato pancakes, that serve as a base for refined toppings of salmon tartare and Dijon cream. Sure beats a dollop of Daisy.
