I asked about preheating the oven for the fries. “I don’t really pay attention to stuff like that…” Andrew says. “I’m just gonna put them in on high and when they’re done, they’re done…” He clutches a fat knife and easily carves the sweet potato skins loose. “Well, at home [my dad] showed me cooking [tricks]. We cooked together sometimes. I’d say I only got into it a few years ago when I started living on my own.” He tosses the spears in some olive oil, salt and pepper. Very simple.
