Brooklyn Chefs Give Thanks
Susan Povich, owner of the Red Hook Lobster Pound in Red Hook
What single event or milestone occurred at your restaurant this year that you’re particularly grateful for?
Wow. Grateful. We are SUPER grateful. I am personally grateful to my husband for bustin’ it out so that we could re-open on March 1st. We never would have made it without him!
What dish on your menu are you most grateful to have free, unlimited access to?
I am grateful for the sustainable Maine lobster fishery whose self-regulation and forward thinking earned it certification by the Marine Stewardship Council, enabling us to give to good people of NYC the best lobster that Maine has to offer for years to come.
What makes you exceptionally grateful to have a restaurant in Brooklyn, over anywhere else in the world?
I am grateful to Brooklyn because it is the home of the Brooklyn Flea, which five years ago, gave us a great launch pad. Because our hometown of Red Hook is in Brooklyn (though we may secede) and Brooklyn is one of the few places where people will spend money on good food before they pay the landlord!
