Whether you’re hosting the entire thing yourself or crashing someone else’s meal and bringing along a single dish, pie is both one of the most crucial and frustrating-to-make aspects of a Thanksgiving dinner. Like, you can always just toss some brussels sprouts in the oven to roast while other stuff is cooking, and anybody can make potatoes, but pie is a whole separate production, and one that it’s generally worth outsourcing. This is especially true in Brooklyn, which is, of course, lousy with exceptional local bakeries to choose from.
Thanksgiving pies are a serious business here (meaning ordering has already closed at a lot of bakeries), but there are still a lot of incredible options, which take minimal planning ahead for a wonderfully over-indulgent payoff.
