The Pines: Fresh Pasta with Rabbit
So the restaurant that I went to the other night with my disciplined, marathon-running friend was The Pines. And while I was the only one who got to enjoy the Leaves of Grass cocktail (the combination of whiskey and lovage syrup is smoky, but fresh…intoxicating in every sense of the word), we both indulged in the bread basket (generous hunks of torn bread, served with tangy, house-made cultured butter) and while that ordinarily would have been enough carbs, we are he is in training. So we also got the fresh pasta with rabbit, chestnut, and pecorino. The pasta was perfectly al dente, and the rabbit was melt-in-my-mouth tender. And the leftover broth at the bottom of the bowl? Just sop it right up with some of the leftover bread. Carbs on carbs! So healthy.
