Blue Hill At Stone Barns
If you’ve ever, even once, eaten and enjoyed a meal that qualifies as “farm to table,” you indirectly have the people at Blue Hill to thank. The restaurant (which also has a branch in Greenwich Village) was one of the movement’s earliest practitioners (they opened up in 2004) and is still one of its most literal, given that it is, in fact, located on a farm. Just a short ride up the Hudson on Metro North (and about a 10 minute drive from the station once you get there), it’s worth getting to Stone Barns early for a tour of the farms before sitting down to a menu they’ll have concocted that day based on their current fall harvest. It doesn’t get a whole lot more seasonal than that.
