2. Wash, trim, cut, and eat some of the strawberries as you do so. I like to cut big wedges so the jam has a more chunky consistency. Don’t worry if some are underripe; they’ll add more acidity and firm texture. Don’t worry if some are mushy; they’re about to get much more so.
