For three weeks last March, farm-to-table trailblazer, Dan Barber, transformed the West Village’s Blue Hill into an environmentally-conscious pop-up called WastED, challenging guest chefs to craft innovative dishes from ignored, overlooked, and otherwise less-than-coveted food byproducts.
