Single-Concept Restaurants: Even though Smorgasburg is essentially breeding ground for potential single-concept restaurants, Manhattan has ended up seeing the greatest influx. There’s Empire Biscuit (which sold out of product during their first day in business, despite the existence of far superior biscuits throughout the city), Taquitoria, which specializes in our 12th favorite drunk food, and Potatopia, an abject crime against spuds.
