The next wave of Jewish food enthusiasts, Shalom Japan follows in the footsteps of Mile End, Shelsky’s and Traif with gleefully inauthentic items, like Lox Bowls, Jew Eggs and Lambs Tongue Okonomiyaki. And they’ve picked up where Dassara left off with an admirable Matzoh Ball Ramen. But their best dish reads as thoughtful fusion rather than pure gimmick; miniature challah breads made with yeast left over from sake brewing, and slathered with butter studded with sake-plumped raisins.
