Frankie’s: Pappardelle with Braised Lamb, Tomato and Tarragon
And, uh, so, just because not every pasta dish needs to have meat, doesn’t mean that those that do aren’t among the most satisfying ones out there. Case in point? Frankie’s pappardelle with lamb, tomato and tarragon. The lamb adds a gamy funkiness that I for one love, and the tarragon gives the dish a sweet, licorice-y kick that balances the natural acidity of the tomato really well. This is just one of those harmonious pasta dishes that gives the eater renewed respect for Italian cuisine and its tradition of balanced, well-sourced ingredients that come together in the most delicious possible way.
