Oh my god, this is just the best mac & cheese you’ll ever have, and so if you have any excuse at all to eat more carbs, take that excuse and eat the DuMac & Cheese. The combination of cheddar and gruyere here is magical, with the sharpness of the cheddar and the nuttiness of the gruyere complimenting one another perfectly. The bacon lardons sprinkled throughout might be considered overkill by some, but not by me, because I love bacon and cheese and pasta all mixed up together. And while the radiatore pasta isn’t the typical shape for mac & cheese, it works beautifully because it has so many ridges that hold onto all the creamy goodness of the bechamel sauce. Finally, the whole thing is topped with crunchy breadcrumbs and parmesan cheese, giving it the textural contrast that elevates a great mac & cheese to the status of a legendary mac & cheese.
