Quinoa Mac at Brooklyn MAC: Obscuring veggies under a shroud of cheese is a cheap trick often used on children, and it works equally well in the land of wheat-free mac. To be fair, this Greenpoint joint demonstrates a deft hand with notoriously difficult to cook GF pasta (quinoa-based elbows) which are neither hard and grainy nor unpleasantly slick and mushy. But it sure doesn’t hurt to cover them in kielbasa and smoked gouda either.
