Going Whole-Hog: A Step-by-Step Guide to Roasting Your Own Pig This Summer
Devote an enormous amount of space to carving up the roasted pig, without too much falling over the sides for the dogs. It will happen anyway. Allow the pig to rest away from the heat for half an hour to an hour, too — it will stay hot for quite a while. Arm yourself with a cleaver, a carving knife, plenty of tongs, and a lot of carefulness in using those tools in addition to the hot temperatures of the meat. The Applestones suggest getting plastic gloves, “so you can pull it apart the way nature intended.” By this point in the party, though, the kid gloves are definitely off, and you have probably grown much manly hair on your chest. Enjoy the fruits of your labor in all its indelicate glory — you’ve earned it.
